Yam Rice~ 芋头饭~


Today is a lovely Sunday and i think  most people will scream for the coming Monday soon. Haha ~~
Adam was looking back into his folder and found this yam rice recipe that he should be shared with you long ago. So, today we gonna look at how to cook this yam rice. Again, yam rice is also another very common food among chinese, i remember that  i have wrote about Bukit Mertajam Yam rice.  That was a nice food hunting trip and the yam rice was one of the most unforgotten taste.

after that trip, adam had his own experiment on yam rice. It takes 2 time for this become success. Are you familiar with chinese 5-spices powder? this powder has a unique fragrance that appear in most home-taste recipe, such as hokkien ” goh hiong” rolls, “lok bak” or some other…. adam found that the 5-spices powder suit yam rice too! it was quite exciting as the flavor matched.

ingredients:

  • rice X 2 cups, preferably use jasmine rice rather than white rice
  • water X 2.5-3 cups depends on the rice you used
  • yam, diced, about 1/2 a bowl or more if you wish
  • salt 2 teaspoons
  • 5-spiced powder 1/4 teaspoon
  • soya sauce- depends , just to make it colour
  • garlic, dried shrimp ( can be optional )

here we go

  1. heat a wok with some oil, fry the diced yam until it separated well ( not sticky, slimy)
  2. add in garlic or shrimp if you want to, saute them until fragrance.
  3. now you add in the 5 spiced powder and mix them over a low fire and switch off the stove.
  4. Now, add the rinsed rice and water together in the rice cooker.
  5. add in salt, soya sauce and the fried yam in step 1.
  6. turn on the cooker and wait for it ready!

Isn’t it easy?  It is suggested that do not immediately open the lid of the rice cooker once the rice is ready, try to let the rice stay inside the cooker with lid close for at least 15 minutes. this step ensure the rice is not too wet or sticky and you will have more springy texture. let’s have a try and let me know what you have did!

我看了看电脑,看见了这个芋头饭的食谱,其实早该和大家分享了,之前可能忘记了吧~ 记得我之前写过大山脚芋头饭。。。  那次可是一个好吃的美食寻宝。。。希望还有下次!

我想大家都知道五香粉吧?华人料理常用的, 福建人的“五香卷”就是其中一个。 味道对很多人来讲可能都很“家庭”吧?
也有人可能根本不知道那味道就是五香粉的关系吧? 哈哈,没关系,现在你知道了! 再试验了2次之后,我发现阿,其实五香粉的味道是配芋头饭的!有点意想不到但是效果还很不错。

材料:

  • 香米2杯
  • 水2.5 -3 杯
  • 切丁的芋头, 1/2碗,或则多一点。
  • 盐2茶匙
  • 五香粉,1/4茶匙
  • 酱油,上色用,适量。
  • 蒜头,虾米(可选择)

做法:

  1. 锅子里面加油烧热, 加劲切好的芋头翻炒,直到不会粘粘的,表面一点金黄就好了
  2. 加入蒜头,虾米爆香。
  3. 这时可以加进五香粉,小火炒一下,再熄火。
  4. 这时,准备好洗过的米,加水,摆进饭锅里面。
  5. 加盐,酱油还有步骤1的芋头。
  6. 之后就是按下开关等待饭熟就好了。

这里有个小建议就是当饭熟了以后不要马上打开盖子,让饭再饭锅里面继续烧大概15分钟,这样出来的饭比较不会有湿湿粘粘的口感。
